It feels so good to be in Spring! 

So much to awaken our senses! 
It smells so beautiful and the garden is a feast for the eyes.

My Mister and I were hiking earlier this month and we were charged by a large black bear. We were the only ones on the trail. We heard crashing through the woods, so we stopped to evaluate what we were hearing and there it was running straight for us. I think it was a bluff charge, by the way it was moving in big leaps towards us, and puffing itself up. My Mister told me to go ahead of him a bit, and he stayed back and yelled at the bear. It then stopped in its tracks and retreated. So glad I had my big strong man with me! We suspect it was a mama bear. They are so cute! But man it was big, and terrifying having a creature that big and powerful, with sharp claws and teeth charge you! 

I had a delayed response, and about a day later I had the worst anxiety for a week. 
I'm feeling better now, and just enjoying all the flowers blossoming in the garden!

10 years ago I used to make all our own tortillas, because it was hard to find them without preservatives or organic. These days there are loads of them organic. Now I make all our Naan! Organic & Vegan. So bubbly and chewy. Mmm. We're going to fill them with chickpeas, tomato, cucumber, lettuce, and drizzle em with a homemade dill/lemon tahini dressing.












My sweet girl made us a special treat a few weeks back. 
Peanut Butter Maple Fudge
It was scrumptious! 
She is at the age where she is enjoying independence in the kitchen, where she
likes to get creative. <3


  
~Banana Blueberry Nice Cream~
Such a healthy tasty treat. 
Frozen banana, blueberries, and a splash of almond or oat milk
ran through the blender, until a delicious ice cream consistency is made. 
It's really good! 
I like to add Medjool Dates, too. 

I bake my family something special once a week. Sometimes it's savory, sometimes it's something sweet. It's been fun making some of our favs veganfied and trying new recipes, too. Pumpkin muffins last week and Lemon pound cake with a lemon glaze and blanched almonds this week.
