A Light Exists in Spring

A Light exists in Spring
Not present on the Year
At any other period –
When March is scarcely here

A Color stands abroad
On Solitary Fields
That Science cannot overtake
But Human Nature feels.

It waits upon the Lawn,
It shows the furthest Tree
Upon the furthest Slope you know
It almost speaks to you.

Then as Horizons step
Or Noons report away
Without the Formula of sound
It passes and we stay –

A quality of loss
Affecting our Content
As Trade had suddenly encroached
Upon a Sacrament.

~*~Vegan Vibes~*~
 For vitality and the good of all. 

It's been a few weeks since we've been eating an organic vegan diet. 
It feels amazing. 
Both my Mister and I have much, much more energy.
We're happier and my mister has lost over 20 lbs! 
Which was how much he was overweight, believe it or not! 
I've lost about a pound a week. 8 lbs so far.
I don't think I could ever go back.
It's been such an awesome journey and it's only been a few weeks.

Some tasty meals we are enjoying...

African Peanut Soup 
You fill half your bowl with sticky brown rice and the other half with spicy salty sweet creamy goodness garnished with nuts and cilantro. 
Amazing combo that I would not expect to be so delicious.

Cucumber Roll 
Sushi Rolls have been a go to for lunches a couple times a week.
I enjoy filling mine with avocado, carrot, and cucumber along with the rice.
We make a tasty dipping sauce made with sriracha, fresh ginger, & soy sauce.

Veggie Stew & cornbread 


Cannellini beans cooked in marinara sauce, served with garlic bread and a side of steamed veggies and brown rice


I'm super happy with how these vegan brownies turned out. I used this recipe https://www.allrecipes.com/recipe/68436/vegan-brownies/ 
Since it had mixed reviews and some people said they turned out too dry, I decided to add chocolate chips and walnuts. I also followed one reviewers advice and mixed the flour with water before adding the oil, so the gluten forms.
Doing that though made it harder to mix and i was totally convinced half way through baking that it ruined the texture, but that wasn't the case! They are very gooey and moist




 Our own recipe for Jamaican jerk deliciousness served on naan. Sorry no pics! 
The recipe is; 
1 C of cooked chickpeas
1 large crookneck squash, chopped
1 large sweet onion, chopped & caramelized
1 C of chopped pineapple
Saute it all in as much Jamaican jerk sauce as you'd like, we use a few Tbs. of Busha Browne's Spicy Jerk Sauce, which is very tasty!
Serve it over warm naan and top with cilantro. It's very good!
We also have a side of roasted sweet potato and carrots.
